Different stages of making cheese

There are very few people who do not like cheese. It is one of the most considered and consumed milk products in the world. Cheese lovers often desire to taste different kinds of cheese but most people love to taste it by making cheese on their own. Milk is the main product which is used for making cheese. There are different types of cheese that are available in the market and that are made up of sheep, goat and cow milk. Mozzarella cheese can be manufactured by using buffalo milk. Milk from camel, horses, deer, yaks and llamas is used for the manufacturing of different kind of cheese blends.

The curdling process is the first step for making cheese and it can be done via curdling or coagulating the milk. These days, cheese can be curdled with coagulating and bacteria culture. Both of these processes are used for speed up the separation of solids and liquids. Milk is allowed to heat until it reaches to bacteria free temperature. During warming process, sometimes a coloured dye is often added in order to produce a specific colour. Milk is heated to extreme temperature so as to produce large curd from it. After the formation of large amount of curd, it is then cut and stirred and then the whey is allowed to drain off. Again, the milk is heated and then pressed in order to remove the whey.

In the next step, after the completion of whey process, warm curd is then shaped or molded into cheese. These days, the cheeses are shaped or molded by using similar mold or cheese wheel. Warm curd is then pressed and poured into molding. After this, the salting process is performed in which the high amount of salts is added. Salt plays a vital role in formation of outer coating and cheeses rind. Thick outer coatings are often developed on heavily salted cheeses and Swiss cheese is the perfect example of it. Ripening plays crucial role in making cheese.

There are several books or other resources available online from where one can acquire the recipes for making cheese. However, there are some crucial ingredients like salts, acids, lipase powders and rennet that are used for processing cheese. Also, there are some factors on which the cheese manufacturing depends. The milk should be pasteurized completely, proper butterfat content of milk, length of processing, flavouring agents used. All these factors are responsible and plays vital role in making cheese.
