This fluted wheel is used to make the familiar ruffled edges of lasagne, ravioli, and farfalle (butterfly-shaped pasta) or to spruce up the lattice strips on top of a crostata di ricotta (cheese tart). Known in Italian as a rotella pasta, the jagger's 1½"-diameter stainless steel wheel is held firmly in a nickel-steel frame set into a polished wood handle, and is of top quality.
